Course Appetizer

Ingredients

  • 2 8 oz blocks cream cheese (softened)
  • 1 cup cooked ham, finely chopped
  • 2-3 tbsp red bell pepper, finely chopped
  • 1/4 cup yellow bell pepper, finely chopped
  • 1 packet ranch seasoning mix
  • 1 cup cheddar cheese, shredded (optional but recommended)
  • 1/2 tsp black pepper

Instructions

  • In a medium bowl, mix softened cream cheese until smooth.
  • Add ranch seasoning and black pepper; mix well.
  • Fold in chopped ham, red onion, red and yellow peppers, and cheddar cheese (if using).
  • Taste and adjust seasoning or add-ins as desired.
  • Spoon mixture onto plastic wrap and gently shape into a ball.
  • Wrap tightly and refrigerate at least 1 hour (overnight is best).
  • Before serving, roll in herbs or nuts if desired.

Notes

  • Want a smoother, creamier texture? Add a 1/4 cup of mayonnaise. That's the sweet spot, and if needed you can always add a tablespoon more. The mayonnaise has a slight tang that plays well with the ranch and makes it easier to spread or scoop. Plus, it feels more "bring-a-bowl-to-the-table" than party-perfect cheese ball, making it perfect for that casual event. To make this version, skip forming it into a ball. Just serve in a shallow bowl.
